Take a small vessel, add a tsp of cooking oil, after it heats add half tsp mustard seeds and let it splutter
Now add 7-5 curry leaves and stir for a while. Then add it to the mixture containing potato
Add salt as per taste
Mix the contents well. Taste it once before stuffing it. Adjust with salt or chilles or any other ingredient if necessary
Now make lemon sized ball of the mixture and keep it ready for stuffing
Now take the dough and make ball of bit bigger size than the stuffing mixture.
Roll the dough into small poori, then insert the stuffing mixture
Cover the dough along sides, see that the stuffed mixture does not spill out. Seal it at the top
Now roll it again to form thin chapatis.
Apply some cooking oil on a pan, then put the rolled chapati and apply oil again on the top
Keep flipping every now and then to roast it evenly on both sides.
