Aloo Paratha | Aloo Parota

Ingredients
  

  • 3 Medium sized Potato
  • 200g 1 cup Wheat Flour
  • 100g 1/2 cup Maida All purpose flour
  • 4-5 Green chili
  • 8g 1/2 tsp Cumin Seeds
  • 25g 2 tsp Ghee
  • 8g 1/2 tsp Mustard Seeds
  • 7-8 leaves Curry Leaves
  • Cooking Oil as required
  • Salt to taste

Instructions
 

Making Dough

  • Take two cups (400g) of wheat flour in a dough maked or a vessel.
  • Add one cup maida (200g) to it. Take wheat and maida in 1:1 proportion.
  • Add little salt
  • Add 2 tsp ghee to the mixture
  • Add water as required. Adding warm water makes the dough soft. If you add more water then you can adjust it with adding more wheat flour
  • Knead to form dough
  • Cover it with damp cloth and keep it aside for 30 minutes.

Making Stuffing Mixture

  • Boil 2 medium sized potatoes. Peel the skin off and mash it and put it in a vessel
  • Take 4-5 green chillies, chop it into small pieces and add it to vessel along with potatoes
  • Add half tsp cumin seeds

For Seasoning

  • Take a small vessel, add a tsp of cooking oil, after it heats add half tsp mustard seeds and let it splutter
  • Now add 7-5 curry leaves and stir for a while. Then add it to the mixture containing potato
  • Add salt as per taste
  • Mix the contents well. Taste it once before stuffing it. Adjust with salt or chilles or any other ingredient if necessary
  • Now make lemon sized ball of the mixture and keep it ready for stuffing
  • Now take the dough and make ball of bit bigger size than the stuffing mixture.
  • Roll the dough into small poori, then insert the stuffing mixture
  • Cover the dough along sides, see that the stuffed mixture does not spill out. Seal it at the top
  • Now roll it again to form thin chapatis.
  • Apply some cooking oil on a pan, then put the rolled chapati and apply oil again on the top
  • Keep flipping every now and then to roast it evenly on both sides.
  • There you are, delicious stuffed Aloo parathas are ready to consume. Eat it with curds and pickle for better taste.
