Take 100g maida, 50g rice flour and 50g samolina (sooji rava) in a mixing bowl. The ratio is 2:1:1
Add 2 tsp ghee to it
Take a medium sized onion, finely chop it and add to the mixing bowl
Add a tsp of finely grated ginger. Here you can add grated dry coconut if needed. We have skipped it as we fry the vadas later in coconut oil.
Add 2 tsp red chilli powder and half tsp turmeric powder. You can add green chilli paste instead of red chilli powder. This gives greenish colour to the vada.
Add 50g raw peanuts, this is the key ingredient of this recipe. These peanuts gives a special taste while eating vadas
Add salt as per taste
Mix all the ingredients, knead it well with hands and keep it aside for 10-15 minutes.
After 15 minutes now gradually sprinkle water and knead it. Do not knead it harsh, the pea nuts should not get crushed.
Now add 50g finely chopped coriander leaves. Take 5 -6 leaflets of curry leaves, cut it in half and add to the mixture.
Knead all the ingredients to form smooth dough. Now we are all set to fry it.
Grease your hands with little ghee. This gives good texture and helps in avoiding cracks while flattening the dough
Now take small balls of the dough, roll it gently on the palm and flatten it to around 5mm thick patties. You can give desired size and shape.
Take cooking oil in a pan (I have used coconut oil) heat it on a low flame. Leave the vadas into it. Remember when you fry anything which is thick or bulgy then always keep the flame very low. This ensures even frying from both inside and outside.
Remove it when it turns reddish brown and crispy. It takes usually 8-10 min for each vada to become crispy if you keep the flame low.
Tasty, crispy maddur vadas are ready. Munch it with sauce, chutney or without any accompaniment with you family members.
