Carrot Halwa

Carrot Halwa aka Gajar ka Halwa is a popular North Indian sweet. It tastes even better when served with a scoop of vanilla ice cream or a couple of Gulab Jamoon. The sweet is more popular during winters. It is so easy to make but one should have a little patience as it consumes a little time for preparation.

For better results make use of tender juicy carrots or the Delhi Carrots. Some people make use of Milkmaid or Khoya for the preparation of this dish. As a matter of fact, both the way the sweet will taste excellent. If you are planning to make it regularly then try to keep it as simple as possible because it tastes good when made in simple manner.

Ingredients
  

  • 500g (4-5) Carrot Wash, Peel the Skin and Grate it
  • 500ml (1 Packet) Milk
  • 250g (20 tsp) Sugar
  • 70g (6 tsp) Ghee Used Twice in the recipe
  • 25g (2 tsp) Almond Cut into small pieces
  • 25g (2 tsp) Raisins
  • 25g (2 tsp) Cashew Nuts Cut into small Pieces
  • 5g (1/2 tsp) Cardomom Powder

Instructions
 

  • First take 500g of fresh carrots, wash it thoroughly and peel off its skin
    500g (4-5) Carrot
  • Grate it using a grator
  • Keep it aside
  • Transfer it to a pressure cooker and add 500 ml of Milk. (Do not add condensed sweetened milk as we add sugar later). Cook it up to 3 whistles. Do not overcook, otherwise it will turn to a paste and the halwa texture will be lost
    500ml (1 Packet) Milk
  • Now take a pan (Kadai), add 4 tsp ghee and heat it.
    70g (6 tsp) Ghee
  • Once ghee is heated add Dry fruits (Cashew nut pieces, Almond pieces and dry Raisins). Fry it till golden brown. Keep it aside.
    25g (2 tsp) Almond, 25g (2 tsp) Raisins, 25g (2 tsp) Cashew Nuts
  • Transfer cooked carrot from the pressure cooker to the same pan.
  • Now add 250g of sugar to it. (Amount of sugar can be changed according to requirement, It is recommended to add less sugar for diabetes patients). Saute it on a low flame for around 5 minutes.
    250g (20 tsp) Sugar
  • Now add 2-3 tsp ghee again. This gives better aroma to the dish. A little khova can be added instead of ghee too.
    70g (6 tsp) Ghee
  • Now add half tsp powdered cardamom seeds.
    5g (1/2 tsp) Cardomom Powder
  • Saute it till water contents evaporates and you get a thick consitancy
  • Now add the roasted dry fruits and mix it well for the one last time.
  • There you go! Sweet delicious Carrot Halwa is Ready !

Notes

Carrot Halwa has a medium shelf life. Keep it in refrigerator and you will be able to consume it for 20 days from the day of preparation.
