Maddur Vada or Madooru Vade is a savoury snack named after a town called “Maddur” in Mandya district, Karnataka. These larger sized, thin crispy vadas are made from the dough made up of maida, rice flour and semolina (sooji) mixed with a spicy mixture. Then turned to patties and deep fried in oil. It tastes very good with chutney or can be had without any accompaniment.

Author’s note on making Maddur Vada recipe: 

Hello all, when I was a kid, I always loved to eat some crispy snacks like fritters or chips when I came back from school. Probably every kid craves for crispy eatables. But nowadays all the packed food available in market contain lot of taste makers which are not good for health. So this snack is a perfect evening time snack to munch with and good for health too. Not only kids but also all the family people can sit together and have it with tea and can spend great moments together.

Maddur vada which are made in hotels, mix dry grated coconut while preparing the dough. It gives a unique taste to the dish. But I fried the vadas in coconut oil which also gives the same flavor. It is an easy recipe and even a beginner also can prepare this easily.

Ingredients
  

  • 100g Maida (all purpose flour)
  • 50g Rice flour
  • 50g Rava (sooji or semolina)
  • 50g Peanuts raw peanuts
  • 1 (medium sized) Onion finely chopped
  • 1 inch Ginger finely chopped
  • 25g (2 tsp) Red chili powder
  • 25g (2 tsp) Ghee
  • 5g (1/2 tsp) Turmeric powder
  • 5-6 leaflets Curry Leaves
  • 50g (1 bunch) Coriander leaves finely chopped
  • a pinch Asafoetida
  • Cooking Oil for frying
  • Salt as per taste

Instructions
 

  • Take 100g maida, 50g rice flour and 50g samolina (sooji rava) in a mixing bowl. The ratio is 2:1:1
  • Add 2 tsp ghee to it
  • Take a medium sized onion, finely chop it and add to the mixing bowl
  • Add a tsp of finely grated ginger. Here you can add grated dry coconut if needed. We have skipped it as we fry the vadas later in coconut oil.
  • Add 2 tsp red chilli powder and half tsp turmeric powder. You can add green chilli paste instead of red chilli powder. This gives greenish colour to the vada.
  • Add 50g raw peanuts, this is the key ingredient of this recipe. These peanuts gives a special taste while eating vadas
  • Add salt as per taste
  • Mix all the ingredients, knead it well with hands and keep it aside for 10-15 minutes.
  • After 15 minutes now gradually sprinkle water and knead it. Do not knead it harsh, the pea nuts should not get crushed.
  • Now add 50g finely chopped coriander leaves. Take 5 -6 leaflets of curry leaves, cut it in half and add to the mixture.
  • Knead all the ingredients to form smooth dough. Now we are all set to fry it.
  • Grease your hands with little ghee. This gives good texture and helps in avoiding cracks while flattening the dough
  • Now take small balls of the dough, roll it gently on the palm and flatten it to around 5mm thick patties. You can give desired size and shape.
  • Take cooking oil in a pan (I have used coconut oil) heat it on a low flame. Leave the vadas into it. Remember when you fry anything which is thick or bulgy then always keep the flame very low. This ensures even frying from both inside and outside.
  • Remove it when it turns reddish brown and crispy. It takes usually 8-10 min for each vada to become crispy if you keep the flame low.
  • Tasty, crispy maddur vadas are ready. Munch it with sauce, chutney or without any accompaniment with you family members.

Quick Notes:
  • Before making the dough, keep the mixture to set down for 10-15 minutes
  • Add raw peanuts, they are key ingredients.
  • While frying fry in a low flame for 8-10 min each.
