Veg Pulav or Vegetable pulao is a spicy rice dish made by cooking rice with spices and vegetables. Most of people cook the rice and spices separately and then mix it at the end. Here we have demonstrated making pulao using cooker where all vegetables, spices and rice are cooked together. This method gives more tasty pulao as the spices and rice blend together while cooking. Using a big list of ingredients and spices, this dish is totally nutritious and healthy too. A perfect dish for breakfast or lunch or even dinner.

Author’s Note on making Veg Pulav:

Hello all, Veg pulav is one of my favorite dishes. Initially I used to do it without using cooker i.e cooking rice and spices separately then mixing it. It is a easy way and there is no risk of over cooking or spoiling the dish. But making pulav in cooker requires a proper proportion of rice and water. If you use less water then the dish will burn and using more water will spoil it.

So an important suggestion I would give if you choose cooker method is, Read the instruction given on the packet of basmathi rice. Normally good quality basmathi rice comes with instructions on the package. The cook time is different for different company rice. I have used Patanjali Basmathi Rice and for that water and rice ratio is 2:1 and you need to cook upto 3 whistles in cooker. Rest you can add different desired veggies and different proportion of spices to make it more spicy.

Veg Pulav | Vegetable Pulao

Ingredients
  

  • 300g (1.5cup) Basmathi Rice Soaked in water for 1 hour
  • 3 (medium sized) Onion Chopped vertically
  • 100g Carrot diced
  • 100g Beans chopped
  • 100g Green Peas
  • 100g (half cup) Grated coconut
  • 4-5 (slice) Bread
  • 15g (1tsp) White poppy seeds
  • 60g (5 tsp) Ghee
  • 4 (piece) Cardamom
  • 4-5 (piece) Kashmiri red chilli
  • 5-6 (cloves) garlic
  • half tsp Turmeric powder
  • 2 inch (strip) Cinnamom
  • 5-6 Cloves
  • 1 tsp Coriander seeds
  • 1 (big sized) Bay leaf
  • 1 tsp Fennel Seeds
  • 1 Star anise
  • half cup Coriander leaves
  • Cooking Oil for frying bread pieces
  • Salt to taste

Instructions
 

  • Put 1 tsp ghee in a pan, heat it.
  • Add 1 star anise, 3-4 cardamom pieces, 2 inch long cinnamon strip, 5-6 cloves and 4-5 Kashmiri red chilies.
  • Roast it till you start getting aroma of these spices. Once done put the mixture in a bowl and keep it aside
  • Now put half cup of grated coconut in a mixer jar.
  • Now add half onion, then 5-6 garlic cloves and 1 tsp coriander seeds
  • Then add 1 tsp white poppy seeds and 1 tsp fennel seeds to same jar
  • Now add the roast spices which we prepared in the beginning and add half tsp turmeric powder to it.
  • Grind all the ingredients to a coarse paste. The masala is now ready. Keep it aside.
  • Now put 4 tsp ghee in a cooker, heat it.
  • Add a bay leaf and then 3 medium sized chopped onion. Put a little salt, this reduces the cooking time of onions
  • Once the onion turn to golden colour add the ground masala paste.
  • Saute the masala and onion thoroughly for a minute. Add little water so that the masala doesn't stick to the bottom of the cooker.
  • Now add 300g basmathi rice which is soaked in water for an hour.
  • Now add the veggies. We have used Carrot, Beans and green peas. You can add any other desired vegetables like, Beetroot, baby corn or even paneer mushroom etc etc.. Mix the ingredients well
  • Now pour 3 cup Hot water. Rice and water to be taken in 1:2 ratio. If you use hot water, you can save lot of time. So keep some water to boil when you start making pulav.
  • Mix all the contents well and add salt according to taste. Close the lid and cook upto 3 whistles
  • Mean while take some bread slices, cut into cubes and fry it in cooking oil
  • Fry it till it becomes crispy and turns to brown colour
  • After 3 whistles, let the cooker cool down, then open the lid and add half cup chopped coriander leaves
  • Add the fried bread pieces.
  • Mix the contents well and allow the pulav to settle down for 5-10 minutes before serving
  • Super tasty restaurant style Veg Pulav is ready to eat

Notes

Few key points to remember while making Pulav in cooker is
  • Add correct proportion of rice and water in cooker.
  • The cooking time inside the cooker is very important.
  • You can avoid bread and use other veggies
  • Do not use tomatoes as it rottens very fast and gives some sour taste.
